House of Scotland brings together the very best of Scotland in one destination, celebrating exceptional produce, world-renowned whisky and the warmth and personality of Scottish hospitality.
The journey began more than a decade ago with Calum MacKinnon and Andy Waugh, two Scots with a shared passion for championing their country. Through Mac & Wild, they built a reputation for bringing Scottish food, drink and hospitality to new audiences, from early street-food beginnings through to restaurants in London and the Highlands.
House of Scotland is the next chapter in that journey.
Built on longstanding relationships with Scotland’s estates, farmers, fishermen, growers, independent bottlers and distilleries, House of Scotland is designed to showcase not only the country’s greatest produce and whisky, but the people and stories behind them.
Contemporary, welcoming and proudly Scottish, House of Scotland is a celebration of where Scotland has come from, what it does best today, and how it can be experienced by a new generation of guests from around the world.

How we got here
2014
Mac & Wild
A Scottish restaurant and bar in London built on wild venison, family estates and a serious whisky list. It proved there was an appetite for Scotland told properly, without the shortbread.
2021
Bonnie & Wild
A Scottish marketplace in Edinburgh: many kitchens, one room, one bar. We learned how a building holds a crowd, and how much better producers do when they stand side by side.
2026
House of Scotland
Both ideas, on top of each other. A whisky bar, a music bar, a chophouse, an immersive tasting bothy and a members' room — five distinct spaces that share one cellar and one point of view.
